Founded in 1948 by Stanislas Labbé and Elmina Fortin, Laiterie Charlevoix pasteurized and distributed farmers' milk until the 1960s. Over the decades, the company moved away from selling dairy products, concentrating instead on Cheddar production, retailing and distribution. In the 90s, Laiterie Charlevoix began producing fine cheeses, becoming one of the first cheesemakers in Quebec to do so.
