The idea of building a cheese factory came to Sébastien Lemay in 2011. He wanted to diversify the family farm's activities by adding value to the exceptional milk from their herd of Jersey cows. Following a unanimous decision to go ahead with this new project, the Lemay family, along with the Boucher and Ling families, began the necessary steps.
